INGREDIENTS
- 1 T oil
- 2 pieces of ham
- 2 carrots
- 2 stalks of celery
- 1 large onion
- 1 potato
- 1 package of split green peas
- 2.5 cups of vegetable or chicken stock
- 1 clove of garlic, minced
- 1 bay leaf
- parsely, minced
INSTRUCTIONS
- Peel and finely dice carrots, onion, and potato.
- Finely dice ham, and celery.
- Sweat the garlic, carrots, celery, and onion with a bit of oil in a pressure cooker.
- Add the rest of the ingredients, except for parsely.
- Cover the pressure cooker and cook at full pressure for 15 minutes.
- Allow the pressure cooker to cool enough for the pressure to be released.
- Garnish with parsely, and add salt and pepper to taste.
It is also possible to cook this recipe in a regular pot. Keep the pot covered, and be prepared to let it boil for quite some time until the peas rehydrated and get mushy.
This recipe makes 4 to 6 servings.
